Sunsweet Prune Oat Cookies

Enjoy the perfect blend of natural sweetness and wholesome oats with these Sunsweet Prune Oat Cookies. Soft, chewy, and packed with goodness, they’re a tasty snack you can feel good about—great for any time of day!
Ingredients
- 65 g Sunsweet® Amaz!n Prunes, diced
- 80 g unsalted butter, softened
- 38 g brown sugar
- 14 g honey
- 70 g oat flour
- 12 g cornstarch
- 1 g baking soda
- 1/4 tsp salt
- 70 g rolled oats
Instructions
- Whisk together the butter, brown sugar, and honey (just 1-2 minutes).
- Add all dry ingredients except the rolled oats (sift if needed). Fold using a spatula.
- Add rolled oats and Sunsweet® Amaz!n Prunes, mix until combined.
- Portion the dough into 28 g each, roll into balls and slightly flatten. Place on a baking tray lined with parchment paper.
- Freeze for at least 30 minutes.
- Preheat oven to 165°C (330°F). Bake cookies for 18 minutes at 165°C, then lower to 140°C (285°F) and bake for another 10 minutes.
- Remove from oven and let rest on the tray for 10-15 minutes, then cool completely on a wire rack.
