Sunsweet Prune Lemon Pound Cake

Sunsweet Prune Lemon Pound Cake combines the zesty freshness of lemon with the natural sweetness of prunes. Soft, moist, and full of flavor—this cake is perfect for any occasion!
Ingredients
- 130 g unsalted butter
- 110 g cream cheese
- 145 g castor sugar
- 1/8 tsp salt
- 2 large eggs (120 g)
- 2 egg yolks (35 g)
- 170 g cake flour (e.g. Kunci Biru)
- 1 tsp baking powder
- 100 g Sunsweet® Amaz!n Prunes + 1 tbsp all-purpose flour
- 15 g lemon juice
- 10 g full cream milk
- Zest of 1 lemon
Cream Cheese Frosting:
- 200 g cream cheese
- 50 g castor sugar
- 150 g whipping cream
- 4 g lemon juice
Decoration:
- Sunsweet® Amaz!n Prunes
- Lemon slices
- Thyme leaves
Instructions
- Mix room-temperature unsalted butter with cream cheese until just combined.
- Add sugar, lemon zest, and salt. Mix again until the mixture is pale and fluffy.
- Gradually add the beaten eggs and egg yolks in parts, mixing continuously.
- Sift in the flour and baking powder. Fold gently using a spatula.
- Add lemon juice and full cream milk, mix until evenly combined.
- Fold in the diced Sunsweet® Amaz!n Prunes coated in flour.
- Preheat oven to 170°C (top and bottom heat).
- Transfer batter into a piping bag and divide into molds.
- Bake for 20–25 minutes or until a toothpick inserted into the center comes out clean.
