Sunsweet Lapis Legit

Sunsweet Lapis Legit is a rich, layered cake with a fragrant blend of spices and a sweet twist from Sunsweet Prunes. A perfect indulgence for special occasions!
Ingredients
Ingredient A:
- 360 g unsalted butter
- 270 g margarine
- 36 g sweetened condensed milk
Ingredient B:
- 648 g egg yolks
- 250 g sugar
- 2 g salt
- 7 g vanilla extract
Ingredient C:
- 65 g low-protein flour
- 10 g spekkoek spice (lapis legit spice)
- 15 g milk powder
Ingredient D:
- 200 g Sunsweet Amaz!n Prunes
Ingredient E:
- 100 g unsalted butter (for brushing)
Instructions
- Beat Ingredient A until just light and fluffy using a mixer at medium speed. Set aside.
- Beat Ingredient B using a mixer at medium to high speed until thick. Then mix with Ingredient A using a mixer at low speed until well combined. Set aside.
- Add sifted Ingredient C, stir gently until combined using a spatula or mixer at low speed.
- Prepare an 18x18x7 cm pan lined with baking paper. Preheat the oven at 160°C (top and bottom heat) for 20 minutes, also heat the pan for 10 minutes.
- Place Sunsweet Amaz!n Prunes between plastic sheets, press until flat or use a rolling pin, then cut into shapes as desired with a cookie cutter.
- Pour 100 g of batter into the heated pan, spread thinly and evenly with a spoon or spatula.
- Bake each layer until golden brown for 10–15 minutes using top heat only at 150–160°C (adjust according to your oven).
- Remove from the oven, brush Ingredient E over each baked layer, then press down with a lapis legit press tool.
- Place the flattened Sunsweet Amaz!n Prunes on every third layer, or as desired.
