- 100 g Sunsweet Prunes
- 25 g all-purpose flour
Dry Ingredients
- 125 g all-purpose flour
- 5 g baking powder
- 5 g cinnamon powder
- 3 g spekkoek spice mix
Wet Ingredients
- 150 g butter
- 60 g sugar
- 180 g eggs
Instructions
How to Make Sunsweet Prunes Pound Cake:
- Preheat the oven to 170°C (top and bottom heat).
- Prepare and measure all ingredients according to the recipe.
- Dice the Sunsweet Prunes into small cubes, coat them with flour, and set aside.
- In a bowl, mix together flour, baking powder, cinnamon, and spekkoek spice mix.
- Beat cold butter and sugar using a paddle attachment until light and fluffy.
- Add the eggs gradually, mixing well after each addition.
- Slowly add the dry mixture into the butter mixture and mix until fully combined.
- Add the floured Sunsweet Prunes, fold gently with a spatula until evenly mixed.
- Pour the batter into a loaf pan greased with butter and lined with baking paper on the sides and bottom.
- Bake at 170°C for 45–60 minutes, until golden and fully cooked.
