  • 100 g Sunsweet Prunes
  • 25 g all-purpose flour

Dry Ingredients

  • 125 g all-purpose flour
  • 5 g baking powder
  • 5 g cinnamon powder
  • 3 g spekkoek spice mix

Wet Ingredients

  • 150 g butter
  • 60 g sugar
  • 180 g eggs

Instructions

How to Make Sunsweet Prunes Pound Cake:

  • Preheat the oven to 170°C (top and bottom heat).
  • Prepare and measure all ingredients according to the recipe.
  • Dice the Sunsweet Prunes into small cubes, coat them with flour, and set aside.
  • In a bowl, mix together flour, baking powder, cinnamon, and spekkoek spice mix.
  • Beat cold butter and sugar using a paddle attachment until light and fluffy.
  • Add the eggs gradually, mixing well after each addition.
  • Slowly add the dry mixture into the butter mixture and mix until fully combined.
  • Add the floured Sunsweet Prunes, fold gently with a spatula until evenly mixed.
  • Pour the batter into a loaf pan greased with butter and lined with baking paper on the sides and bottom.
  • Bake at 170°C for 45–60 minutes, until golden and fully cooked.
